Bobotie is Shout African traditional food. In fact, this is a mix of spiced minced meat baked with eggs topping on top.
Today, bobotie is made with beef or lamb meat. But, if you want your bobotie has more moisture, you can use pork.
Throughout history, they use ginger, marjoram and lemon rind. But, after that curry was put in the recipe. That made everything easier but still the main concept stay the same.
As a matter of fact, in some recipes, you can add chopped onion and almonds.
However, the texture of the dish is complex. Baked eggs mixed on top are going great with milk-soaked bread which adds moisture to the dish.
Like most, everyone has some special version of the recipe. And here is one.
Ingredients
* 500g mincemeat
* 30ml oil
* 1 large grated carrot
* 2 chopped onions
* 10ml chopped garlic
* 5ml curry powder, cinnamon, ground coriander and ginger, turmeric, sugar, and salt
* 15ml fresh lemon juice or white vinegar
* a thick slice of bread – need to be soaked in milk
* 125g almonds
* 3-4 bay leaves
* 250 ml milk or buttermilk
* 2 eggs
Cooking instructions
At first, you need to fry the onion and garlic on the oil. After that, you need to add minced meat. It is important to cook until the meat is nice and crumbly.
Now, you need to add all the spices and the carrot. At the end add the lemon juice and mix in.
So, now you will need to add soaked white bread. And it is important that bread mixes properly. You shouldn't see the peace of bread. In the end, you need to add almonds.
Whisk together milk or buttermilk and eggs.
Now you can put the mix in the medium-sized baking tray. And on the top, you need to add mix with milk and eggs. You can use the bay leaves for the decoration.
It is important to bake at 180-190 for about 40 minutes.
You can serve this meal with yellow rice and raisins, sliced banana, chutney and coconut.
